Okay, I've got a new Christmas project--I'm going to make homemade chocolates. That way I can make it exactly the sweetness that I want, and more of a milk chocolate (low cacao) flavor. I also want to try some white chocolate. I can't handle the really dark chocolates because the theobromine affects me too much (ruins sleep). Interesting 1Dogday that it affects you that way, never heard that. Now it's just a matter of getting the materials together and figuring out how to do this. If anyone has taken on this project, I'd love some input!
For my family, I'll make some sweetened with honey, they'll like that, not super sweet. None of them trust stevia or erythritol (silly). Maybe add chopped nuts, dried fruit, etc...I get extra points for anything homemade. Especially if I can make it look interesting.
I tried a new brand of stevia (only) sweetenend chocolate, and I was not impressed. Very dark and chocolatey, but not sweet enough and a bit of bitter aftertaste. I'm really glad my first stevia sweetened bar was Lily's.
