yesterday i was on a very log drive back from another race- and STARVING.
i vaguely remembered hearing of the chain bojangles and thought it was fast casual- like a panera.
in a desert of Wendy's, McD's, etc....we went with bojangles.
um, hmmmm......would not go back, but we survived-
side garden salad with blue cheese- also came with a LOT of cheddar on it
insides of grilled chicken wrap- chicken was surprisingly good, again served with a crazy amount of cheese- and i LOVE cheese
*eaten sitting on a curb, getting stung like crazy by some weird flying insects, so we didn't leave our dog in a hot car*

happy to be home today enjoying:
steamed egg with Frank's
2 babybel cheese
wasabi seaweed snacks

will have tiger nuts, sf jello, daikon rasdish kimchi for snacks

diet 7-up

*no stinging flies! score!*

snacks later- terriyaki seaweed crisps, tiger nuts or pumpkin seeds, NSA carnation instant with eggbeaters added for protein.

*as many of you know, i was seriously ill, and now need to gain at least 15 pounds pronto. i was hitting 2500 to 4000 kcal per day and not improving, so last week at the endo, he came up with a plan:

i will now be adding 400-500kcal per day using shakes- the carbs in the NSA carnation have enough to kick me out of ketosis, but with the egg beaters and controlled portion, he thinks i will finally gain weight. will report back. but yes, my endo's first way to make me gain weight was to increase carbs, while still keeping it pretty low carb so my blood sugars don't skyrocket.*

Pork tostada without the refried beans or the tostada. (shredded pork, shredded cheddar cheese, sour cream, shredded lettuce, slices of jalapenos)

Oohhh... that sound so good! If you want a tostada "shell" you can nuke a slice of provolone (on parchment paper) for 45-60 seconds. It turns crispy and works really well for tostadas, or if you fold it in half as it's cooling it works as a taco shell, too.
