Oh, that'll do nicely. I make my own coconut manna too, just grind unsweetened, dried coconut to a powder and mix it with coconut oil.

What is coconut cream, is it that stuff they sell in tins or ?

Coconut cream is like coconut milk but they leave more of the coconut solids in. The stuff I get a Trader Joe's (in the US) is almost solid. They have it in Asian stores too, but it often just seems like coconut milk.

Where are you located?

Nancy, Widget's original recipe that was my inspiration had no cream cheese. Had less lemon juice, too. SURE you can omit the cream cheese. The original didn't even have coconut in them.

note to self....try this recipe next....I couldn't find this recipe this morning and found Widgets recipe via google. This one looks less creamy and more lemony....love lemony.

Those look really good! I tried something similar recently, just throwing stuff together and yeah, my cream cheese didn't quite blend in, but the flavor was good. I've also made some with peanut butter and maple flavoring for an alternative to chocolate(which I've had to temporarily give up).

I really had to "beat it up" !!! I made the choco FB's too with Almond Butter.....YUUUUUM!!!!!! Will be a few months before I will be needing any more bombs but this one will be next

Oh, sure you could. I just added the cream cheese to make them rich. You could up the coconut cream, up the coconut oil, do what you said, or just leave the cream cheese out entirely. It's not essential to the structure at all.

I made these tonight and stayed about as close to the recipe as I could. I could not find coconut cream. I found everything else, though - and subbed coconut butter + heavy cream for the coconut cream. They turned out good. I used a whisk attachment for my hand mixer and it blended everything together nicely.

I made these mainly for my daughter - who wants to have a ready sweet snack handy when she has the urge. I left them a little too tart for her taste (although I liked 'em that way). She loves cream cheese - and loved the hint of cheesecake flavor in these.

Thanks for posting it. It was easy peasy to make.

I'm glad you liked these. Sometimes I leave most of the lemon juice out and increase the cream cheese. That makes them even more "cheesecake" like.

Is that really all coconut manna is? Ground coconut combined with coconut oil? That's gotta be cheaper than the premade stuff.

I was wondering if anyone knew of an alternative to using silicone molds? I don't happen to own molds of any kind (yet).
