Default Meat Cake

Lately I've been reading murder mysteries by Joanna Fluke - one of that odd genre of mystery plus recipes. Since the heroine is a baker who owns a cookie shop the recipes are not usually LC friendly! But the latest book contained this recipe which she said was for a dog, but all the ingredients are human-friendly and I could see this being a fun looking addition to the table of a low carber or for a low carb party, or even a pot luck!

You will need 3 8-inch cake pans for this recipe. Pre-heat oven to 350F.

Ingredients:
1/2 pound lean ground beef (you need lean so meat doesn't shrink too much)
1/2 pound ground chicken
1/2 pound ground turkey
8-oz package cream cheese, softened
4-oz package liverwurst

Note: that is all that is in the original recipe since it was for a dog, but for us humans I think it would be good to add some spices and seasonings to the meat - maybe something different for each kind of meat. Some salt and pepper for all, but I might, for example, add a little chili powder to the ground beef, maybe some rosemary to the chicken, possibly garlic powder then to the turkey. Maybe some sage? thyme? Whatever sounds good.

Grease the 3 cake pans or spray with non-stick cooking spray (I use either olive oil or coconut oil spray)

Mix salt, pepper and spices into each type of meat individually.

Press the lean ground beef into the bottom of one cake pan, spreading it all out evenly. Do the same with the ground chicken and the ground turkey in the remaining two pans.

Bake the three pans at 350 for about 25-20 minutes. Use a turkey baster to suck out the grease and either dispose of or reserve for another use. Let the meat cool.

When the meat is cool place cream cheese and liverwurst in a bowl and blend thoroughly. If they are too solid to stir you can zap in the microwave for 20-30 seconds. You can repeat microwave if still too solid. But once they are well blended you are ready to frost. If you don't have a microwave, as I don't, you can probably add a little heavy cream to make it more blendable.

Then you put it together just like a cake - place one meat layer on a plate and cover with a layer of frosting. Place second layer on top of first and cover with frosting. Repeat with third layer. Reserve enough frosting to coat the sides of the "cake" also. Then refrigerate and serve cold in thin cake-shaped slices.

I haven't actually made it yet, so no photos. But maybe I should, and if I do I'll be sure to take pictures of it! Maybe I'll made a smaller version of it to serve as an appetizer next time my son and DiL come over to eat.

One of the great things about France is their multiple varieties of pate at the supermarket. In the USA, pate is a pricey - gourmety item to eat, but over there it's just one of many different versions of cold meat loaf -- most, with a luscious layer of fat on top. Throw a slice on a piece of lettuce and you have one of the quickest meals.

Anyway, I detest the NY times, but I made the below and loved it. The best part is the supermarket guy did most of the work grinding chicken and pork together.

Rustic French Pork and Chicken Pâté
Published NYT December 9, 2011


1 3/4 pounds boneless pork shoulder, not too lean

3/4 pound boneless chicken thighs

3 ounces pancetta or unsmoked bacon, sliced thick

1 1/2 teaspoons kosher salt

1/2 teaspoon finely grated garlic

1 teaspoon finely chopped fresh sage

1 teaspoon finely chopped fresh thyme

1/4 cup dry white wine

1 tablespoon Cognac or other brandy

1/4 teaspoon black peppercorns

1/4 teaspoon coriander seeds

1/8 teaspoon fennel seeds

4 cloves

Pinch freshly grated nutmeg

Pinch cinnamon

Pinch cayenne

1 bay leaf.

How cute! I've seen meatloaf made up as cupcakes before with white or sweet potato mash for "icing". both would be a big hit with kids!

I'm game for everything but liverworst. I've never had it but I was told its awful. Ok, I just asked BF, he didn't have anything good to say about liverworst. I bet if I thought about it, I could come up with a different topping.
