Of the fish I have tried I by far prefer the more muscular ocean fish - I'm not a fan of mushy texture - I have eaten with success; tuna, swordfish and mahi mahi.

I do enjoy some other suggestion - fresh crab for sure! I have never tried scallops.

Hmmm ChefMichel... Do you happen to have any Atkins-Friendly recipes for anything cajun flavored? I have been craving a good gumbo or jambalaya but I cringe when I look at any recipes I come across and I don't dare go out for anything of that nature!

Thank you for the help and I did want to add that I appreciate the tip on thinning the bacon for the scallops! I've not had much luck with them in the past as the bacon is either still too mushy or the scallops way over done. Can't wait to try my hand at the thinning technique!

Hi Askwhy,
I've created a seafood and sausage gumbo recipe with 11 carbs, 2 grams of fibre and it should be a whole meal. I'll pick up the groceries and then take some photos while I'm working.

Hi Teresa,
Not sure where to go on the fish suggestion. Here in Toronto we have poor access to ocean fish and we eat mostly farmed fish. Honest the meaty fish are best cooked over high heat and really briefly. What kind of recipe are you looking for? What kind of fish is on sale and I'll make a recipe up and we can cook it together..complete with photos of course.

Just can't do it! lol (If I didn't have kids I'd ask them to not leave the chips but I can't deny them the chips!)
I sure miss them that's for sure. Worse we order a side of cheese dip and a fresh guacamole made at the table, which were begging to be put on chips. Luckily the fajitas were delivered quickly and got a healthy coating of those goodies.

Ate at a hole in the wall place in Hardeeville SC on our trip south. Split a steak and choriso specialty with DW and ask NOT to have chips or beans(she ate the rice/tortillas)... It was OK and I don't think it was too unatkins.... You really never know when you eat out... Had a McDouble minus bun for lunch - probably should have had two... My hunger is starting to return - Hmm? Maybe it was that Encore Bar I ate while I drove. It came in my Atkin freebee kit and is absolutely too good - tastes like real candy?!... Less than 5hrs left to go tomorrow to get to the beach front condo and some fresh ocean seafood...

Wow -- All the talk of bacon wrapped scallops -- I had to have some for lunch and they were GREAT! Better yet I didn't have to make them. Yum

I know this was not a loss, but I feel good about this bc I had some real raw milk ice cream this weekend and have increased my carbs from 30 to about 50 -60, eating more fruit and dry beans. I am also having fluid issues.

Default Low Carb Seafood and Sausage Gumbo

P1040618 by chefdemaison, on Flickr

3 tbsp. oil
2 cups onions, minced
2 cups green peppers, minced
2 cups celery, finely diced
3 cloves garlic, minced
1 bay leaf
3 tbsp cajun spice
2 cups canned clams with liquid
2 lbs. polish style kielbassa (smoked cooked sausage)
1 14 oz. can chopped tomatoes
2 lbs. shrimp, raw, no shells

At around 8 servings it was 11 grams of carb but I'd say it's more like 10 to 12 servings. It was very yummy, freezes well. If you make it take a photo and share.

In a largish soup pot, heat oil on high heat, add onions, green peppers and celery and saute 2 to 3 minutes. Stir in bay leaf, seasonings, garlic and saute for another 5 minutes, stirring ingredients frequently.
Add remaining ingredients except for shrimp, bring to a boil and simmer for about 25 minutes or until vegetables are well cooked. Just before serving stir through shrimp until just cooked (a minute or two).

I wanted to use Okra to make it more authentic but I didn't have any in the house. If you decide to add some, I'd cut back an equal amount on the celery to keep the carb count the same. I served it over white rice for the kids. A very easy to adapt recipe for the non low carbers.
