Default Mexican Lasangne

I got this recipe from a friend and just transformed it to low carb

1lb of ground beef, browned
1/2 cup of chopped onion sauteed
1 cup of red salsa
seasonings: chili powder, salt, pepper, cumin
4 low carb tortillas
3 cups of grated cheese, i used cheddar and mozarella (1.5 cups of each)

brown meat with seasonings, add onion and saute. pour salsa over and get warm.

in 8x8 baking dish, cover bottom with small layer of meat mixture, add a portion of cheese, then 2 tortillas, next layer, meat mixture, cheese tortillas, meat mixture, cheese as topping.

bake at 350 for 20 -25 min. to mainly melt cheese and warm everything up.

while it is baking i made a pico de gallo out of shredded cabbage, 1/4 cup of onion, cilantro, and 3-4 chopped tomatoes seasoned iwth little salt and a lot of cracked pepper and 1/4 cup of lemon juice. Shake it up good.

i served this over the mexican lasange.

i didn't figure the carbs exactly. on the day we had this i hadn't really had any carbs so i new i was 'safe' in that regards. i will run it thru fit day and see how it comes out.

this recipe was so good. would even be good WITHOUT the tortillas.

I often have trouble finding things for my dinner but also cooking something that my husband will enjoy. Thanks for the recipe..... sounds good and the hubby will love it!!!

I have the same question as Wanda...Where did you get the low carb tortillas...........those sound wonderful!! haha, being from Texas, I really miss tortillas!!!!!!!

My Trader Joe's here in Washington state has low carb tortillas. I just found them yesterday, so I haven't tried them yet! But the Nutrition label says: ............ Total Carb 12 g
.......................minus Dietary Fiber 9 g
.......................equals 3 g net carbs !!!!!

They are made by La Tortilla Factory in Santa Rosa, brand name of"Tamayo Family" . It is the one touted and recommended by Fran McCullough in "the Low Carb Cookbook" & by Dr. Eades in "The Power Protein Plan."
