I think cooking it in the chicken stock and then adding a mayo kind of thing sounds good too. Maybe even a bernaise sauce. Thanks everyone!

I just made cauliflower for Thanksgiving-
just boiled and mashed with a fair amount of Smart Balance
everyone raved and no one else was Paleo
I like the way cauliflower tastes alone but the smart balance
gives it the richness it needs without overpowering its flavor

I agree. At least two of those oils will be genetically altered and it has whey (dairy) anyway. Several of the ingredients aren't even food.

Kalyn's kitchen just posted this this morning:

Twice Baked Cauliflower
(Makes 6-8 servings; recipe adapted slightly from The Low Carb Gourmet.)

Ingredients:
1 large head cauliflower
4 oz. cream cheese
1/2 cup sour cream
1/4 cup minced green onions
1/4 cup freshly grated Parmesan cheese (If you only have finely grated Parmesan, use a bit less)
6 slices bacon, cooked until very crisp, and then crumbled
1 cup sharp cheddar cheese


Instructions:
Preheat oven to 350F/180C. Cut out stem and core from cauliflower, and cut into small pieces. Cook in large pot of boiling salted water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher, leaving some chunks. Mix in cream cheese, sour cream, green onion, Parmesan, and 3/4 of the crumbled bacon.

Spread evenly in a medium-sized glass casserole dish. Sprinkle with cheddar cheese and reserved bacon. Bake 30-35 minutes, or until hot and bubbly.

I am copying this for myself, but the OP wanted dairy free. I'm not sure I could do that if she means totally dairy free. I like my butter, cream cheese and cream cheese added, or it's plain cooked cauliflower.

I at the very least have an intolerance. Got some cauli today to try at least one or two of these. Have you tried anything yet, Scarlet?

I'm thinking I will try cooking the cauli in broth and creaming it up with mayo...adding in some bacon fat and caramelized onions. I've got the ingredients, but it will be a day or two before I get the time to try it.

they're harvesting cauliflower, now.
i purchased 17 pounds of cauliflower (3 heads) for $5.
chopped it all up, bagged it and threw it in the freezer.
didn't bother pre-cooking it.

if you can grab some cauliflower now, this would a good time to do so.

Our favorite mashed cauliflower recipe so far started with roasting a chopped up head of cauliflower and several cloves of garlic in the oven at 450 until the edges started browning, then running it through a food processor with standard dairy ingredients, s&p until smooth. Nutty and creamy! I wonder if you could replace dairy with EVOO or another oil and a little chicken broth? I love the idea of carmelized onions, too.

Wow! Great price! It's still around $3 lb. here! I'll be keeping an eye on the prices, though.

i have been eating smart balance since before i started paleo
my mom raised us on butter

i don't do dairy but i think i am throwing out my smart balance after reading this
we use olive oil for most things but i usually would bake with smart balance
Not anymore haha

oh and on the cauliflower side
mine kind of roasted a bit from neglect at the end
and it definitely added a lovely flavor
i think most veggies are best when roasted
like asparagus
roasted is the bomb

I bought cauliflower yesterday to try the bacon grease and caramelized onion combo, but I can't get this bacon to give up its fat. It's the weirdest thing. I've been shopping at a local place called QFC (I think it's related to Kroger). Their bacon has a good smoky flavor but the fat isn't rendered off in cooking. It just stays in place and gets chewy. Anyone ever seen this before? It's new on me.

Thinking of grating the cauliflower and making fried "rice" now. Cauliflower is $2.49/lb here. You got a great price Pilotgal.

I have a really nasty cold right now and have been living on soup. I haven't had a chance to try anything yet. Let us know how your experiments go.

I use coconut oil for baking too. It's fantastic!!
