Default Mercola interviews Taubes

The Mercola site was only letting me play 2 out of the 6 parts, so I found it better to go straight to Youtube.

Say what you will about Mercola, this is a very nice six part interview in which Mercola is very polite and really lets Taubes talk without interrupting. Compared to the Oz fiasco, it was like a breath of fresh air. GT uses some new analogies to describe good science that was ignored- like proving that a coin has only one side by ignoring the flips that resulted in "tails" and only including the flips that resulted in "heads".

I also enjoyed (? need a better word for that) remembering the things we all ate in the 80's, like egg whites (throwing the yolk away), oatmeal with apple juice, boneless skinless chicken breasts, etc. That made me remember how the cookbooks all said you could reduce the fat in muffins by replacing it with an equal amount of applesauce.

This may have been better to post over the weekend, as there are six parts to the interview and they're all over ten minutes each.

I followed a recipe for brownies once using pumpkin instead of oil. BLECH!

It was an interesting interview. Nothing really new, but I always enjoy listening to Gary Taubes. It's also a good introduction of his views for someone who is not familiar with his work.

I converted the videos into a single MP3 file, so I could listen to it on my ipod. There is no visual on the videos anyway. It's around 60 MB. If anyone wants it, I can try to upload it to a file sharing site.

Heck, probably most of the people I know in real life actually still strive to eat that way today.

Yes! I have one friend who uses non fat yogurt and fat free Parmesan cheese to make Fettucine Alfredo.

I am almost to the point where I'd suffer some of the regular (fresh, real egg) pasta if I knew the rest of it were real (real cream, butter, and Parmigiano Reggiano...). Well, maybe just a little.

Grocery store near me sells those decidedly overpriced but extremely low-carb shirataki noodles. They make a fairly decent substitute for pasta to hold your favorite sauces if you first rinse and drain them well.

Here as well, I have a good friend who still thinks she can eat some chocolate chip cookie cake because it's low in *fat*! As long as she can cut the fat, it's okay to eat.
