Beef Asian Wraps. Recipe is on this site. Love this meal.

It's cheap, easy to cook, has few ingredients but max flavor, and I get to eat it with my hands. Only carbs is the amount of lettuce I eat.

Left overs are great on salads, in a tortilla, or in scrambled eggs. I appreciate that it can be morphed into many other meals so none of the meat is wasted.

baked catfish! We set out stringers last night ans checked them this morning, we had 20 big catfish! I love catfish, any way its cooked. Ganna have to freeze a bunch and several people will want some.

And I had been planning on chicken, LOL!

Shrimp sautéed in butter over cauliflower "grits" and sprinkled with a little feta and crumbled bacon. My favorite meal these days, and it looks beautiful plated up.

Sardines in EVOO, with some mayo and scallion, mashed up and served on my protein-fat crackers. Sliced tomatoes on side, or a lemonade (lemon juice, water, EZ-Sweetz), haven't decided yet.

1/4 cup each:

Put into food processor to mix well. Cut in one full stick butter. I'm a genius shrimp salad (recipe under quick meals i think), over lettuce....maybe a little goat cheese on the salad- dressing will be EVOO and apple cider vinegar, plus whatever herbs strike my fancy.
