I just had some premium ground beef charbroiled to perfection from the grill, topped with a thin slice of 6-year old cheddar, fresh tomato and a few zesty kosher pickle strips... with a side of French-cut green beans sopping in butter, complimented with slivers of almonds.

Perfect. I love Atkins.

a nice refreshing salad with fresh ingredients and warm leg of lamb on top... drizzled caesar's salad dressing on top.

that was dinner..



breakfast was beef and cabbage.

L: 2 eggs scrambled with bacon and bacon fat, gouda cheese, a little salsa.

B: 3 soft boiled eggs shared with my baby boy

L: cut up roast cooked in mayo, no seasonings needed

S: 2 hamburger patties with crumbled up cooked bacon, parmesan and jalapenoes mixed in dipped in a mayo/mustard mixture.

Ive overdone it on coffee today though I had 3 cups. I have had 2 SnL sweetners today and 2T HWC. I havne't had all my water only 36oz. I need to work on that!

B- blueberry cobbler flavored coffee with sf torani and almond milk
L- (out to eat)
Eggs chesapeake (eggs benedict over lump crab meat instead of ham)- minus the english muffin of course
side salad- greens, carrot shreds, cucumber, and vinaigrette
a few blueberries from mom's fruit plate

D- ???
will see how hungry i am when i get home from work- will be home kinda late, so something light. Maybe low carb yogurt with cinnamon almonds? a few strawberries?

Day 2 back on Atkins after several months:

B=3 egg omelet with 1/2 c. mushrooms, 1/4 c onions and 1 oz cheddar

L=3 oz pepperoni and 2 swiss cheese slices

D=Chicken thigh, roasted til the skin is very crispy.

S=not sure, but probably a bit more pepperoni with an ounce of cheddar

L: 5 hb eggs mushed up with mayo, mustard,garlic,dried onions

S: not sure if I will be hungry or not

SOOOO Is eating 5 eggs at once bad???? I was thinking that seems excessive but I was hungry - ugh now I'm wondering if that was too many????

L: smoked chicken, salad w/ home made dressing, snow peas

S: pork rinds

D: "chicken puffs" made w/ Oopsie rolls...taking an idea from another thread...and putting some of the roll mixture down first, then the chicken mixture, and cover that up with more of the roll mixture...(reg recipe made w/ crescent rolls for everyone else)

For those who want the filling recipe...it's really good!

Chicken Puff Filling

2-3 cooked chicken breasts, diced or shredded, whichever you prefer
1 block cream cheese, room temperature
3 T butter, melted
3 T dried minced onion
garlic powder, salt, pepper to taste

Usually, you would put together 2 triangles of crescent rolls, put the filling in, and wrap the roll around the filling...splitting it between 4 cans of crescent rolls, making 16. This would feed 6 people, 2 each...three for Dad...with leftovers to freeze or for lunch the next day.

But, since I'm LCing, I will use the Oopsie Rolls, and I'm hoping it will turn out tasting alright...I'll let you know!

I use Cleo's recipe that I found on this site before joining. I've made them twice. The first time, I followed the recipe exactly. Then I saw the potential for them.

The second time, I omitted the Splenda and used 1/4 c. cheddar, and thinly sliced green onion. Those turned out wonderful! I ate them for breakfast for three days!

Ok, so yesterday, I didn't make the chicken puffs. I made steamed broccoli and ate it with the cheese sauce in one of the Atkins cookbooks.

B: 4 sausage links (work brought breakfast again, and that was all I could have...they brought donuts, biscuits and gravy, and pigs in a blanket...so I took out the sausages and ate those...)

L: I don't know yet what I'm doing for lunch...I have salad left over from yesterday, but I'm not in the mood for it right now)

D: TODAY, I'm making the chicken puffs...and looking forward to it!

Alright...for lunch I ended up going to the store and getting some pepperoni slices and Laughing Cow cheese. I had 1/2 the pk of pepperoni (one of the small 2-serving pks) with one wedge of cheese. I had another wedge of cheese with some pork rinds and some snow peas. Lunch was actually satisfying!

I blame intermediate fasting for my occasional cravings. All day today I wanted to make, what I am calling stone soup. I have leftover pork and fresh collard greens in the fridge. So I cut up the pork into bite-size pieces and poured a generous amount of beef broth into a large casserol dish. I also added a can or organic pumpkin and a can of black soy beans. Spice of today's choice were a tablespoon of curry powder, onion powder and crushed pepper flakes. When that heats thoroughly, I will add about 2 handfulls of collard greens ( cut up ).

When the soup is done, I wil have a bowl of soup topped with sliced avocado and a little sour cream...slurp.

Breakfast- steak-ums and eggs

Lunch- coleslaw

Dinner- chicken with taco seasoning, maybe more coleslaw

Probably will make a sf dessert of some sort...
