Default Cauliflower Zucchini Puree with Spiced Beef

Cauliflower Zucchini Puree
1/2 head cauliflower, finely chopped
3 Medium yellow zucchinis, chopped
3 garlic cloves, grated
2/3 cup lemon juice, from 3 lemons
1/2 or 1 cup tahini paste(depending on how strict your carb count is) With less Tahini texture will be looser, but still tasty.
1/2 bunch parsely, stemmed
1/2 cup water
salt and pepper to taste

Heat a large Sauce pan on medium high heat, add 1/2 cup of water and chopped cauliflower and zucchini.
Cover with a lid and let cook for 20 minutes adding more water as necessary.
After 20 minutes remove the lid and allow the water to evaporate. When all fluid has evaporated, remove from heat and allow to cool for a few minutes.
Meanwhile make the Spiced Beef.
When ready to make the puree, add cooked cauliflower and zucchini, garlic, tahini, lemon juice, S&P and parsley in a food processor and give it a whirl. Remove onto a serving dish and garnish with parsley or scallions.

Spiced Beef
3 lbs ground beef
1 large onion, chopped
2 Tb olive oil
3 cloves garlic, grated or pressed
2 tsp 7 spice
1/4 tsp cinnamon
1/8 tsp nutmeg
salt and pepper to taste
1/4 cup pine nuts, toasted (optional)

Heat large frying pan on Medium high heat. Add olive oil, garlic and onions and cook until onions become translucent.
Add beef and spices and mix to incorporate together. Cook beef until fluid has evaporated and meat starts to brown.
Remove from heat, add beef on top of Cauliflower zucchini puree, add pine nuts if using and serve hot. NJOY.
