Talking Super satisfying eggplant lasagna

This is a recipe that is a combo of eggplant parmesan and noodle-free lasagna. It was a little time consuming, but the end result was filling and satisfying. I have been struggling lately and this meal made me feel like I was eating comforting carbs again!!

I made this and it turned out really good! I couldn't find eggplant so I used zucchini instead. I also used mushrooms instead of onions.
I couldn't really figure out the carb counts for this, but I divided it into 6 servings and I count each as 5 or 6 net carbs.

Yay I'm glad you enjoyed it I went ahead and did all of the carb counts. I overestimated a bit on some of them (said large eggplant instead of the baby one that I used, etc) and ended up with 75 carbs for the whole thing - 24 grams of fiber, so a net of 51 carbs. When I made it, it made at least 6 large servings, so I would say about 8 carbs or less per serving.
