I dunno that this is true Mike, I've had a big dose of Vitamin C -- yes that would be "the ascorbic acid that is not vitamin C" -- seem to have helped with resolving illness. Although I'd think a big dose of every vitamin, and a spectrum of minerals, would not hurt in such a situation! I don't know that cheese, even if a source of C, is ideal since it has other effects (the chinese consider cheese and mushrooms problematic if you're ill). I know that food - vitamins come "in context" and that is always more ideal. But honestly I've had some pretty decent results from supplements, too.

Salt pork can be kept in a liquid brine, like pickles, this tends to break down and leach out collagen, and the proteins in collagen that vitamin c helps the body to manufacture. This would also leach out the vitamin c in the meat. Dry-salting meats could be expected to have a similar effect, as the liquid is drawn out of the meat, water soluble vitamins like vitamin c would be lost, too.

There is a theory that uric acid may also do some of the same functions as ascorbate. This might explain why both meat and Vitamin C would cure scurvy. Red meat, in particular, is high in uric acid.

I like the Perfect Health Diet blog and book but I think he has been offbase on the dangers of ZC posts. For one thing, he wasn't ZC as the bulk of his diet is vegetables and coconut oil. He is afraid of too much protein, so doesn't eat a lot of meat (about a pound a day, total). Combine that with his long term infection and the self-diagnosis and I don't think you can take much from his experience.

Very well said. He seems to have some anti zc agenda, if you ask me.
