One thing I would do to get around the problem of the big pan having overdone edges and and underdone middle - use my handy dandy Baker's Edge Brownie Pan. I also use this for most baked egg dishes. Very yummy especially if there's cream or cream cheese in the recipe - something about the way it browns along the edges.
