Default Cooked Chocolate Pudding

My favorite all time "comfort food" is home cooked chocolate pudding with butter melted on top. Alas with all the sugar and flour it was a no~no for me

UNTIL NOW! Started with a recipe for eggnog, continued playing and found a very palatable cooked chocolate pudding.

1 C Half n Half > 8 net carbs
1/2 C Heavy Cream (my brand says 0, but I'll say) > 2 net carbs
1/4 tsp salt > 0 carb
4 eggs (at room temperature) > 2.4 net carbs
1/2 tsp vanilla (dunno the carb count for this, it's a minimal amount at best)
1/2 pkg Nestles pre-melted choco bake (liquid bakers chocolate) > 2 net carbs
I used Torani chocolate / vanilla / caramel SF Syrups, add the carbs if you use other bulk sweeteners like splenda
1 Tbs Butter > 0 net carbs

Mix all ingredients in your blender, then pour into a double boiler half filled with boiling water. Cook stirring constantly until as thick as you like. May take 5 minutes or it may take 20 (sorry!). Don't worry if it's lumpy, a trip through the blender will make it smooth and creamy.

Cool in fridge if you like, but I love it hot with more melted butter on top Enjoy with a guilt free smile!

Easily makes 3 servings with < 5 net carbs per.
