Default Honey Mustard Pumpkin Soup

Made a new recipe last night that was a big hit with my non-low carb fiance:
honey mustard pumpkin soup

here was my inspiration:

here is what I actually made:

2 c vegetable broth (sure chicken would have been fine too)
about 1 c of canned pumpkin
threw in veggies that needed to be eaten: 1/2 yellow bell pepper, 1/2 cup halved grape tomatoes, 3 chopped celery stalks, 1 c shredded carrot
salt and pepper to taste
a cinnamon stick
fresh ginger
1/4 c or so of sf maple syrup

voila! it was super easy too- just heated, stirred, served....
I also heated up a sausage and threw it into his bowl (I do not eat meat)- he loved it.

BTW, all measurements are approximate- I just kinda eyeball things.

Yes, I also stir in about 1-2 tbsp of whole grain dijon

Good catch.

BTW, the mix of veggies varies based on what's in the fridge, but all the following work very well:

celery
onion
carrot
red or yellow bell peppers
green beans
sugar snap peas

Basically- veggies where their natural sweetness is easy to bring out complement the soup well.
