Default Fiesta Chicken!

A friend of mine made this as a dip and I modified it for dinner...barely any carbs! Forgive the lack of measurements...just add each as you like!

1 lb. boneless chicken breasts
Fiesta seasoning (I use & like Tasefully Simple's but there are various in the food stores too)
One envelope Hidden Valley Ranch dressing
¾ cup mayo
¾ cup milk
Premade or homemade pico de gallo (I get mine from Wegmans...called Salsa Fresca...probably about 10 oz. or so)
Cheese!

1. Coat the chicken in the Fiesta seasoning and cook. When done, cut into small pieces. .

2. Make Hidden Valley Ranch dressing using powdered seasoning mix. ¾ cup mayo and ¾ cup milk and 2 heaping tablespoons of dressing powder. Add Fiesta seasoning - make until it’s spicy enough. (I use about 2 Tbsp)

4. Mix the cooked chicken and pico and then pour the ranch dressing over it. Cover with Cheese and bake at 350 until cheese has melted.

It is delicious & makes a lot...My fiancee and I eat good helpings for dinner and then I have leftovers for 2 days worth of lunch! It's SO good!!!

It sounds wonderful! I'm going to have to look for something close to the Fiesta seasoning you mention-don't have that brand available here..is it like a taco seasoning? Just trying to figure out what to sub. for it.
