I'd wait...I don't think that adding in flour at this stage of your phase II is wise.....way too soon. Start out with sweet potato first as that is a starchy veggie....second step would be to go to an actual grain as in oats in oatmeal. rolled, steel cut or old fashioned oats are acceptable...no instant!!

I had some thoughts on why you say this but please explain.

OK...this is where it can get kinda confusing. Experience is what wins out here so please bare with me as I try to guide you through this.
As we enter into phase II, we begin to develop a food plan that we can use for the rest of our lives. This is where we learn which carbs our bodies do best with...and which drive us to overeat. I learned that wheat triggers my appetite and it leaves me very hungry...so I tend to avoid it as a grain in general and because of all the grains, wheat is the worst one to eat.
Now, on the ( shhhhh...atkins carb ladder ) , grains are the very last group to add in on that plan...and this makes a lot of sense to me. so that is what I did....waited until I added in starchy veggies first, then added in grains.
Also, a muffin is made from processed grain, not using the whole grain and even whole grain flour is still flour. At the start it is best to add in foods in as whole a state as possible and avoid flour/bread until you are well advanced in phase II and close to your goal.
So...I highly recommend eating sweet potatoes, butternut squash, peas and carrots...as your first starches of phase II......if you need to have cereal, oatmeal will be your best choice...plain old fashioned oats, steel cut or rolled...no instant!! The less processed, the better.
