Default Yellow Cake made with Coconut Flour

I made this yesterday and it was surprisingly good. (don't ask me for the carb count...I'm no good at that stuff! Coconut flour has about 4-5 net carbs per 2 Tbsp.)


YELLOW CAKE

Preheat oven to 350 degrees

Mix together:

1/2 c. melted unsalted butter
9 eggs
1/2 c. coconut milk
1 c. Splenda
2 Tbsp. SF Vanilla syrup
1 tsp. vanilla extract

Sift together:

3/4 tsp. salt
3/4 tsp. baking powder
3/4 c. coconut flour

Add dry ingredients to wet ingredients and mix. Pour into a round, greased cake pan and bake for 30-35 minutes.


* I changed it up a bit and added the zest of one lemon to the batter. Then, while the cake was still warm I poked holes in the top and poured in a drizzle I had made out of lemon juice and Splenda.
I bet you could make all kinds of variations and frostings for it. Orange zest would probably be good too!

I also don't see why this cake couldn't be done in a loaf pan...sliced....and used to make french toast!

I just wanted to add that I made this again and added some coconut extract. While it was still warm, I topped my cake slice with coconut milk I had sweetened with Splenda and more extract. Then sprinkled some shredded coconut. (for looks)

The milk sunk into the warm cake ...it was the closest thing I've had to a bread pudding with a "creme Anglaise" in a long time...only this was better!

The cake has so many eggs in it and is quite dense...Even "I" am satisfied with one piece at a time...and that's rare for me!

( 1 cup = 16 tbsp)
8 x 5 = 40 net carb

so depends on how u eat it...divide them into 10 pieces sounds reasonable..so it would be 5 ~ 6 carb per including the coconut flour and other ingredients
I made it today!! and it tastes great..like a ice cream cake when frozen~! but i used 4 eggs instead of 9 and it turns out OK

I have a chocolate one in the oven right now....only it takes TWELVE eggs!!!!!

A piece is more like a meal than a dessert with that many eggs!! LOL!
I'll post the chocolate recipe separately after I taste it...
