Wow, thank you so much for this recipe! I made it yesterday and we had it for dinner last night. All I can say is wow! It was soooo delicious! My non-low carb boyfriend was truely impressed. He said its the best tasting pork he's ever had! Thanks again!

I don't have a crockpot and use a roaster oven, but basically do it the same way: 1 hour at 350º and 6-8 at 200º-250º. I like to add a can of RoTel tomatoes/chilis and a handful of cilantro to the pot while it's cooking. Mmmm.
