Every once in a while, if it's not annoying to everyone, I'm going to post a simple meal here that I think some might enjoy. I IF, so I plan dinner in the a.m., make sure I have what I need, and then don't think about food for the rest of the day. This is what I'm making for dinner. (may not be kid friendly, mine are used to this kind of thing) My goal is to try to make meals that don't feel like the family is always getting a piece of meat sitting next to a veg, with a plain salad on the side. I try to incorporate vegs in to the protein dish as much as possible with a mind toward color, presentation and flavor. My family is not lc but, when it comes to dinner, they are,

Saute boneless chicken breast in butter. Remove from pan and saute sliced mushrooms, add more butter, if necessary. Add drained, canned artichoke hearts (not marinated), fresh spinach (I like whole leaf but, baby would work), minced fresh garlic. Heat gently, then add some chicken broth and juice of one lemon. Thicken, I use a very small amount of arrowroot, or you could cook down to a glaze, although you'd have to remove vegs so as not to overcook. Slice chicken thinly, and spoon sauce and vegs over top.
Salad: Slice tomato, top with sliced avocado. Sprinkle minced green pepper (yellow or orange would be prettier) and scallions over top. Emulsify sherry vinegar and olive oil, spoon over salad. Crumble an oz. of goat cheese over all, (sliced fresh mozzarella would be good too for those who don't like goat cheese) salt and pepper.
ETA: If you need to add a starch (those pesky non-low carbers), the chicken would be good over brown basmati rice.
