Default Nondairy Lowcarb Fudge

I'm trying to stay away from too much dairy so I came up with this single serving chocolate treat that's just as satisfying as cheesecake .

2 tbsp natural nut butter (i.e., no added sugars)
dry sweetener to taste (I use 1 1/2 tsp xylitol powder but splenda would work)
2 tsp unsweetened cocoa powder
1 tsp SF maple syrup (I'm sure you can use any other flavor, but the maple syrup is a bit thicker than others I've found)
Dash vanilla

Mix all ingredients until you get a kind of dough similar to pie crust dough in consistency. You might need to work with this. If it's too dry, add some water or heavy cream a bit at a time. If it's too wet, you might need to add some sweetener or cocoa powder or some other dry powder (like almond flour), again a bit at a time.

Make into small balls and put on a plate/dish. Refrigerate (not sure how long but it doesn't need long).

This is a nice treat and melts in your mouth .

Tam

Looking for recipes for the holidays....

I tried this with natural pb. It was quite good!

Next time I will try it with almond butter. It was also a tad dry as stated. I will try adding a lc sf flavored syrup instead of water or cream.

It works as an alternative to hc fudge. Thanks for the recipe!

I tried this again using half almond butter and half pb and it was even better! Have several in the fridge now for tomorrow.
