(sorry to be critical but pork rind french toast sounds revolting to me!)

I'm there with you! I came across the french toast recipe last night and was telling Dh about it. He told me he was happy to do this diet with me but he wasnt going to eat those! LOL He even asked if I had read the reviews!

Here is oopsie french toast...

(Picture by JennyJ. Isn't she an amazing cook and a photographer? I want to lick the screen!)

Cutie's Oopsie French Toast

1 egg beaten w/ a bit of cream, vanilla and cinnamon

Coat two oopsies w/ egg mixture and fry in butter like french toast.

I had two this am w/ butter and SF pancake syrup (*cleo's note: Davinci's hazelnut syrup rocks) and 2 breakfast sausages - YUMMO!!!!

(* another note: This recipe is so awesome, you won't even realize it's not French toast with actual bread!)

** Laurie uses sweetzfree, but Jenny omitted Sweetzfree and said the recipe was sweet enough, so if you don't have any, you'll probably be all right.

ETA: this batch of oopsies I added a bit of cinnamon :-)

I made another batch of oopsie's tonight, but for some reason I neglected to fold in the yolk mixture very well, and I suddenly scooped out some very flat oopsies on the cookie sheet...

I ended up with 8 oopsies that are normal looking and 4 that are flat and spread out into one big oops. That's ok though, I'll just make them into french toast for tomorrow morning's breakfast - won't matter if that's flat.

wow, I made some with the mascarpone cheese and cocoa powder then put slivered almonds on the top.

I spread more mascarpone on one, and some heated berries (about 2 strawberries, 3 blueberries, 3 raspberries). I heat them from frozen.

OMG. about 5 carbs but WOW!!!!!!

WOW!!!!!!!!!!!

I love them and am working on a cheesier type and cheese danish. I tried toasting them in the toaster oven but they seemed too crumbly. I like them without anything or with butter. I'm not big on snadwiches... but they would be awesome as a BLT!

Ok I have a double batch in the oven right now. I brought out the proper mixer this time and the egg whites were defintely stiff this time, so hopefully they end up a bit more 'bready'.

I actually made some with splenda and cinnamon and nutmeg, and slivered almonds on top, and the others are normal recipe, but without the splenda and a little bit of powdered parmasen cheese for a more savoury option.

Wish me luck!!
