I just made mini meatloaves, faux twice baked potato (cauliflower mash), and salad! I am stuffed!

I like these ideas on this thread so here is what I had for dinner last night.
Small pork chops coated with mayo and crushed pork rinds and baked in the oven until crispy.
A big pot of Greens cooked on low with lots of chopped bacon bits.
Cucumber salad with sliced thin spring onions, spiced with S&P, dill weed and celery seed, then marinated in EVOO and Apple cider vinegar.

Such a yummy thread! If I'm ever short on ideas, I know where to look.

We had chicken thighs with a spicy rub, baked on the grill, with Zucchini-getti (spiralized zucchini briefly sautéed in butter with some grated parmesan. DH loved this!)

i always love the what's for...threads. love this bump- great ideas!

tonight was:
bacon wrapped chicken
roasted asparagus
green salad

last night- went out with relatives visiting:
2 chicken wings plus most the celery and carrots with the dips
tomato/mozzarella/shrimp salad

night before was also out on the town entertaining- american tapas:
roasted brussels
asparagus with poached egg sauce (similar to hollaindaise)
roast chicken
hake on seaweed salad (apparently chef is experimenting with japanese as well- it was awesome!)
grilled romaine Cesar salad
YUMMMMMM! awesome restaurant!

Last nite - 8 oz grilled hamburger wrapped in lettuce leaves - all the burger fixin's too - mayo, mustard, spicy dill pickles, tomato, sf ketchup, onions

Tonite - crockpot chicken soup (an entire chicken cooked in the crockpot, then shredded and thrown into a stock pot with all the juices and whatever veggies I have on hand)

i dont like eggs but made some for a change. With butter and spice not terrible but prefer meat anytime

keeping it simple the night before a NASTY race- it's ON a beach- what did i get myself into???

broccoli cheddar quiche (like 1/4 of whole pie)
will snack on pumpkin seeds, cheese, jerky, etc....when i get to race location, and kick back tonight.
