Lightbulb Hi Fibre Omelette

If you are like me and find psyllium hard to swallow, here is a tasty way to take it:
4 large eggs
1 T Thai fish sauce
I T psyllium
100g reduced fat cheddar, grated
1/2 sring oninon finally chopped
1 tspn finally chopped red chilli

1.Beat eggs with fish sauce until fluffy.
2. Beat in psyllium until well combined.
3.Beat in onion, chilli and cheese.
4.Pour into a hot non-stick pan sprayed with oil and cook until edges are set. Turn off heat.
5.When omelette is almost set, fold over and serve.

Total cals:765
Protein: 58.6g
Fat: 47.7g
Total carbs: 5.9g
Net carbs: 1g
