Default Turkey Pate

Hey guys, this is a super easy recipe for when you want to use up your leftover turkey (not livers, etc.). I used leftovers of a cooked, smoked turkey and it was DELICIOUS!

1.5 cup cooked turkey (dark meat is richest)
1/2 cup heavy cream
1 tbs balsamic vinegar (not necessary but just for flavor)
1 medium chopped onion, cooked in butter until translucent
3 tbs cognac or brandy

Combine all the ingredients in your food processor until smooth. Add salt and pepper to taste. The mix will look coarse, but spread it into a shallow container and sprinkle the top with chopped parsley. Refrigerate for 30 minutes. It will be so smooth and creamy! Eat by itself, on crudites, or with goat cheese or on a Wasa cracker. So rich! Enjoy!

Thanks for this idea! Sounds good and it's cheeseless, which means I can make it and my DH will actually eat it too. A few drops of liquid smoke would probably give a similar effect when you don't have smoked turkey and some bacon bits mixed with the parsley probably wouldn't hurt either.

This goes in my recipe file!
