Default Baked Chicken with Cheesy, Crispy Skin

Ingredients:
One whole chicken cut into pieces
olive oil
1 cup chicken broth
1 clove chopped garlic
1 Tablespoon dried Italian herbs
1/4 c shredded Romano cheese (grated will work but isn't as pretty)

Place chicken pieces skin side up in 13X9 pan. Rub with oil. Sprinkle with garlic and herbs. Poor chicken broth into bottom of pan (not over chicken or you'll wash off the garlic and spices). You only want the bottom 1/4 of the chicken in the broth or the skin won't crisp. Place in 450 degree oven. After 30 minutes, sprinkle cheese on top of chicken. Cook another 15 minutes or until chicken juices run clear.

This recipe was fast, easy and delicious! What more could you ask for in a recipe. I did add more cheese at the end however. The 1 / 4 cup cheese was not enough to cover all the chicken pieces.

Oh, one more thing, I think I will use garlic powder next time or even skip the fresh chopped garlic. Some of it burned and became bitter from cooking it at such a high temperature in the oven.
