Lightbulb Tom Yam Goong (Hot & Sour Thai Prawn Soup)

A favourite of mine, on my recent holiday in Phuket

(Serves 2 as a starter, 1 as a main)
3 cup Water
1-2 Cloves Garlic, Minced
5 Kaffir Lime Leaves
3 thin slices galangal OR ginger
2 Tbsp Thai Fish Sauce
2 stalks Lemon Grass, lower 1/3 portion only, cut into 1" Lengths
2 sliced shallots
½ cup sliced mushrooms
1-5 green Thai chilis
1 tablespoon chopped corriander
1 large diced red capsicum
1 large fresh diced tomato
¼ cup fresh lime juice
250g uncooked peeled prawns

1.Place all ingredients (except for prawns, tomato and lime juice) in a large pot, bring to the boil, reduce heat and simmer gently 2 min.
2.Add prawns and simmer until prawns are cooked.
3.Add tomato, lime juice and serve.
