Default Meatball soup

This is my version of a recipe someone posted on a support thread. very simple, with a million variations:

Meatballs:
one pound ground beef
one pound ground pork sausage
1/2 tomato (diced)
1/4 package frozen chopped spinach (diced)
3 raw eggs
liberal amolunts parmesan cheese (in place of bread crumbs)
garlic powder
salt
black pepper
white pepper
basil

Mix all ingredients by hand until smooth consistency. Roll into meatballs. This should make about 20-30 meatballs.

Broth: In large stock pot, bring water to boil. Once at a slow boil, drop meatballs into water, one at a a time, and allow to cook. In separate pan, fry thinly sliced celery, onion and carrot, until soft. Add to the pot of water. Add two bay leaves and a handful of chicken bullion cubes. Add in salt, white pepper, one diced tomato, another 1/3 bag of frozen chopped spinach, chili powder. Allow to simmer for at least 30 minutes. Taste broth and adjust seasonings as needed. Remove bay leaves before serving.

This makes a very hearty soup, and you can add more veggies (cabbage, bok choy, okra, etc.) or change out ingredients as you choose (replace the tomaot with mushrooma nd bell peppers, for example)

Really, the sky is the limit as far as the broth goes.
