Just in time! I have 2-3 pounds of pork belly I want to cook up. It'll be my first time cooking it at home. The braising recipe contains a couple things I don't have including the 'kecap manis' - which is I guess a kind of sweet soy sauce?

Hmm - may split the pork belly and try one part Malay-style, and the rest some other style.

You can make Kecup Manis just by reducing soy sauce with something sweet, palm sugar is what is normally used, but a dash of brown sugar would do it. You can just sub it for normal soy sauce if you don't want the sugar. I might check to see if there is an Asian market nearby for weird ingredients.

I hope you can find some of the Thai curry pastes. I had to find some SE Asian supermarkets in my area. If you can't find it, you might try ordering them online: http://importfood.com is one place I've used. If you have a Thai restaurant ask them where to find Thai ingredients in your area. That worked for me.

This is the brand of curry paste I like best. Maesri. I think Mae Ploy is good too, I haven't tried it yet though.

There is a gigantic Chinese supermarket in the city I live. I have been able to find Japanese goods there, but never looked for Thai stuff before.

I will make a note of those brands for when I do get there.

some good looking recipes here, Nancy. so glad I found this thread. I've not done any Thai food at home, but have love all things Thai I've had at restaurants. Looking forward to trying out some of these!

We tried a Thai recipe for the first time last night using curry paste. Found the recipe here and it was okay, but not great.

So I read through this thread today and used several ideas to make another one and it is better! Of course, I really have no idea what Thai food is supposed to taste like.

They must have Thai food in Dallas! Try it out. Curry is usually pretty LC, just avoid the yellow curry because they put potatoes in it. I usually ask for a side of steamed broccoli instead of rice.

Panang curry with duck is one of my favorites.
