Default Beef 'N Cheese Casserole



*Made this up tonight and everyone loved it!*
The cauliflower is a great sub for egg noodles with this dish!
My original "old" recipe used an entire bag of noodles.

Stacy's Beef 'N Cheese Casserole:

Pre-Heat Oven to 350*

2- 16 oz. bags frozen cauliflower microwave 12 minutes
Drain well! (very important)
*All microwaves vary so make sure the cauliflower is done/tender*

Enough sour cream to make a creamy texture
4-5 green onions chopped - tops and all
1/3 C. Shredded cheddar cheese
7 thick pcs of bacon cooked and crumbled{I use low sodium/SF}
Salt and pepper to taste


Once Cauliflower has been drained; Add to a large bowl and mix all ingredients together. *Add enough sour cream to make a creamy texture.

*While all this is going on, I'm also browning the ground beef.* {1 lb.}

In a skillet; Drizzle a light amount of extra virgin olive oil over beef.
Sprinkle in lightly- Salt & celery salt.

I sprinkled in a good amount of garlic powder and fresh cracked pepper.

1 tbs. cumin. - 1 tbs. fresh chopped parsley.

Stir/brown meat/drain

Add back to skillet and add 1 tbs. worcestershire sauce.

Stir and simmer 1-2 minutes. Remove from heat.

In A Baking Dish:

Coat bottom of dish with a light layer of shred. cheese.
On top of that add half of the meat.
Now Add half of Cauliflower mixture.
Sprinkle lightly with cheese and *Repeat Layers.

Bake for 20 mins. uncovered

Make it for yourself!

Just lessen the ingredients to make a smaller batch in a square bakin' dish.

It's great heated up as left overs!

Hi just doing a quick pop in, loving this thread...on the Beef N Cheese casserole was thinking of doing it with the Dreamfield's pasta....it looks wonderful!
