Default Marinated Chicken Drumsticks



*Suitable for Atkins Induction*

This is adapted from an old Australian Women's Weekly recipe.
The original recipe was for barbecuing, and for that reason they suggest parboiling the drumsticks for 10 minutes prior to marinating. I found it much easier just to whack them into the oven.
And of course, pieces of chicken other than legs could be used.

Serves 4

8 chicken drumsticks
2 small fresh red chillies, chopped finely
2 teaspoons paprika
1 teaspoon dried oregano
2 or 3 cloves garlic, crushed
Juice of 2 lemons
2 Australian tablespoons olive oil (40 mL)

Combine all marinade ingredients in a large bowl, add chicken and gently stir to coat chicken in marinade. Cover, and leave in fridge for at least 3 hours, or preferably, overnight.
Drain the chicken from the marinade, and place drumsticks on an oven tray in a preheated hot oven.
Cook for about 30 minutes (depending on the size of your drumsticks), turning once and brushing with reserved marinade.

I don't see why not. You could thaw them in the marinade in the fridge for a few hours, and they should turn out just fine.

Me too! I just got back from grocery shopping, and I grabbed some chicken drums. I hadn't decided what to do with them. This recipe sounds nice, except I have to do them in the crockpot because my oven died.

Results TBA.

Did I miss where it says what temp to cook them at? hmm?

Sorry, matey, I just said "hot" oven.
I actually turned mine up to about 250C.

Yes, definitely delish. I baked mine at 350 for about 45 mins. I'll definitely make these again

Okay, I finally got the ingredients to make this and it's a fabulous recipe. I'm going to call this "company" chicken, because it would please just about anyone.

My oven is dead, so I used the crockpot. Delish.. and the juices at the bottom made the beginnings of a great soup.
