Cool Chocolate-Peanut Butter-Soy Nut Clusters: Only 1.5 carbs/each!

These are yummy, and they look great too! Soy nuts taste very similar to peanuts, and these Chocolate-Peanut Butter-Soy Nut Clusters have a really great salty/sweet taste, a nice crunch, and protein too!!!

1/2 cup coconut oil
3 tbs. unsweetened cocoa powder
3 tbs. low-carb peanut butter
3 splenda (or more to taste, but add the carbs!)
1.2 cups of soy nuts

Warm the coconut oil until it becomes a liquid, add the cocoa powder and splenda, mix well. (The splenda has a tendency to settle at the bottom.)

Heat the 3tbs of peanut butter in the microwave until it's liquid. Mix a little bit of the coconut oil/cocoa mixture into the peanut butter slowly, while stiring to blend well.

Add the peanut butter/coconut oil mixture back into the main mixing bowl.

Line a muffin tin with plastic wrap. Press the wrap down into the cups. Using a measuring spoon, put 1tbs. of soy nuts into each cup. Then add 1tbs. of the coconut oil mixture right on top of the soy nuts in each cup.

Put the muffin tin in the freezer for 10 minutes, remove, lift out each soy nut cluster and put it in a bag or tupperware container to store in the refridgerator. Repeat, until you've made 18 soy nut clusters.

Where can you find soy nuts? Could regular peanuts be substituted?

This recipe looks really good!

I used a muffin that has 6 muffins per tin...I'd say the clusters come out *exactly* the same size as peanut butter cups, if that gives you some idea. I'm not sure of the actual dimentions. I'm sure you could use the mini-cups and get a lot more out of the batch with fewer carbs per serving and then they'd be 'bite sized'.

I buy my soy nuts from the bulk section of our regular grocery store. I know you can also find them at Trader Joes if you have one of those around.

Soy nuts only have slightly over 30 grams of carbs per cup, and half of that is fiber. I think the ones I have are roasted, and perhaps lightly salted.

PS. I just put peanuts into FitDay and it looks like peanuts are about 24 grams of carbs per cup, half of that being fiber. So, you could certainly substitute peanuts for the soy nuts---they are actually *lower* in carbs.

However...I also noticed that peanuts have about 400 more calories per cup, and like 35 more grams of fat.
