Thumbs up GREEN "ENCHILADA" CHICKEN CASSEROLE

GREEN "ENCHILADA" CHICKEN CASSEROLE

4 cups cubed cooked chicken or turkey
2 teaspoons Seasoning for Tacos
8 ounces cream cheese
1 tablespoon minced chives, optional
7 ounce can Green Mexican Salsa
4 ounce can chopped green chiles
6 ounces Monterey jack cheese, shredded
4 green onions, chopped

Grease an 11x7" baking pan. Put chicken in pan and toss with taco seasoning to coat. Soften cream cheese and whisk well with the chives and green sauce in a medium bowl. Stir in the chiles. Pour sauce evenly over chicken; top with cheese. Bake at 350º 25 minutes, until hot and bubbly. Remove from oven and immediately sprinkle with green onions.

Makes 6-8 servings

Per 1/6 recipe: 432 Calories; 29g Fat; 38g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs
Per 1/8 recipe: 324 Calories; 22g Fat; 28g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs


I found this recipe online and decided to try it. It tasted like I was cheating. Seriously. I took a picture of what it looks like & have it in my journal if you want to take a look. VERY tasty & would not change one thing. Hubby wanted seconds I give this the ultimate thumbs up!

Oh my!!! This is great! My DH could not get over how good it was. He kept saying this sauce is so good, it would be good on anything, steaks... heck even on salad. It really is very good. Thanks so much Mmmmmmmmm

What & where can I find "Green Mexican Salsa" - I looked at Meijer and really didn't know what I was looking for...

You can find the green salsa in the mexican section of your grocery store. It was in a small can when I found it. Might have to check in a larger store to find!

I found some at Walmart supercenter--with the other salsas. The brand I found was "Herdez" salsa verde (verde is green in Spanish). It was a small 7 ounce can.

I do a version of this one, and add a pkg of spinach and sour cream and more mexican spices...Very good...My son loves it!
