Default Friday night is pizza night - guess how I handled it??

Ok - Friday night has always been pizza night at our house. My husband will pick up a Papa Murphy's take and bake on his way home from work.

Since my son & I started this woe, pizza night has been pretty crappy for us. We either take the toppings off the pizza (NOT satisfying) or we will order a carbdelight pizza which IS satisfying because it is awesome BUT it is so hard to limit ourselves. We generally end up going overboard on it and it also seems to cause cravings for me.

Last Friday I tried the deep dish quiche pizza. I wasn't too thrilled with it - the crust was so eggy in my opinion. My son felt the same way. THIS Friday I tweaked the recipe for that same pizza and it was AWESOME and will become a keeper!! The crust was like CRUST!! This is how I did it:

Process enough pork rinds to make 2 cups "flour" in food processor. Set aside in a bowl.

In food processor I then added the following:

4 eggs
1/2 cup half & half
4 oz cream cheese
1/2 tsp minced garlic
1/2 cup mozzarella cheese
1/2 cup parmesan
dash of salt
oregano, basil

process all of that and then add back into it the pork rinds and I then added 3 tablespoons Atkins pancake mix - process again.

I greased a cookie sheet and then poured this mixture into it - spread it out evenly and baked it at 400 for about 15 - 20 minutes or until it was golden brown.

Then used about 1/2 cup pizza sauce and topped it with taco meat and cheese - broiled it until the cheese melted.

WONDERFUL. The crust was like CRUST and was so good.

This made 14 nice squares of pizza. 2pcs were all we needed to be satisfied.

I will actually be using this same recipe for the crust and adding some more cheese to it and then cutting it into slices for bread.

Thought I would share! Let me know if anyone tries this and what you think!

WOW! Thats a nice looking crust!!!~# Hmmmm, I may have to try that in a few months. Do you suppose something else could substitue for the Atkins pancake mix??

So here is the carb count:

eggs = 2.4
1/2 & 1/2 = 5
cream cheese 3
garlic = .5
cheese = 1.2
parmesan = 2
rinds = 0
oregano = 1
basil = 1
atkins mix = 2
pizza sauce = 4
cheese = 1.4

Total carb for the entire pizza = 23.5, 14 slices ~ 1.67 carbs per slice!!

I think you could substitute any low carb baking mix for the Atkins pancake mix. I have had the Atkins stuff here for over a year and have never used it. I used it tongiht for the first time in this crust.

I love it!

Sounds really good!!

I miss pizza the most. We made pizza frequently from scratch and always loved a good chewy crust. I can't wait to give this one a whack next time we make pizza or even when the family orders domino's.....


Permit me a quick question? 2 cups of pork rinds before or after grinding?

And may I ask a quick question? Where can I get the Atkins pancake mix? I googled it and can't find it available on any website to which I went. Do ya'll think carbquick would work just the same?

I just edited the main recipe up there to show that the 2cups of pork rinds is after you process them. I'm not sure how many it took to make 2 cups.

I think any other low carb baking mix would work - probably even better than what I had. They must have discontinued the pancake mix. I didn't have any baking mix and thought it was worth a try using the pancake mix.

My son just had another piece of this this morning and he said it was awesome cold too!

I am so happy to have finally found my replacement for pizza!! You don't know how many times the friday pizza night threw me off plan and it is so hard to get back on!!

okay.. YUM.. my dd and I really like the deep dish quiche... especially the morning after.. but we did miss the 'crust' especially when it was hot.. yes it was great for us.. but did not do "pizza'... (hot)...
gotta try this one.. the carb count is awesome... if someone uses that carbquick... please post how it goes... YUM..

i wonder...the atkins baking mix seems to be no longer available. has anyone tried this recipe with soy flower as a substitute?

i just went to YAHOOsearch and put atkins pancake mix and alot of sites poped up. sue www.locarb diner.com

Default Low carb pizza is wonderful

I made this last week for the family and it was absolutely delicious! I added mushrooms and olives along with some browned italian sausage and cheese. I bet some asiago cheese would have been really good too. I already bought the ingredients again so that I could make another pizza and freezer seal individual slices for a quick meal. I love this pizza!

Thanks so much for posting this!! I had wondered if anyone had tried it yet and what they thought.

I basically make it every Friday night now - it is a staple and I LOVE it too!!

I have actually used the asiago cheese its great too.
