Default Baked Cheesey Hash Browns

I love cauliflower but was getting into a cauliflower mash/puree rut, so tried an experiment at the weekend. It was awesome and is also good cold for breakfast.

You need

1 cauliflower, coarsley grated (Mine was just over a pound)
5 large spring onions (Scallions)chopped
handful grated cheddar
handful grated parmesan
4 tbs double (heavy) cream
salt/pepper/nutmeg to taste
few tbs chopped chives
2 tbs olive oil

Mix all above together and put in a greased 8 inch by 8 inch oven dish (I used a metal one and got a depth of about 1cm)

Dot with a tbs or so of cold butter

Bake for approx 45 mins ina hot oven (220) until brown and crispy.

Cut into wedges and serve alongside meat or great with bacon and eggs

Yum yum!! This sounds really lovely! But one question....how do you grate your cauliflower? I have triend in the past and it takes me 5 minutes to grate with a hand held grater, but another two hours to clean to kitchen!!

I grate a whole head at a time by putting it through the coarse grater blade on my processor. I keep it in the fridge in a bag ready to use. I make 'fried rice' with it most often, but these hash browns sound good too. I keep frozen cauli for making mash; its already been blanched so it has a softer texture than fresh.

I reckon the whole lot come in at between 15 and 20g.

I used a coarse hand grater which was a bit messy and I ended up with some bigger pieces. Next time I think I'll use the food processor
