Hey Kevin--Thought I'd give you an update.

Used Hazelnut flour in this second batch. UMMMM, Ummmmm good! Perfect in terms of sweetness--I used the poly-d and no additional sweetening agent. I thought it was perfect. I'm finding that my sweet quotient has gone down since sticking to plan.

Looking forward to the next cookie recipe that comes out of your kitchen.

BTW--how do you think that cookie would hold up as a crust for a refrigerated mousse dessert?? Do you think it would get way to soggy before the mousse set???

I made these cookies and they were great. I doubled the recipe, added 3 Tablespoons of coconut. The only difference is I used vanilla designer whey protein powder. They took longer to cook and did not spread. I had to press them down with a fork. Did you have to do this? Could I have been the protein powder? I will be making these a lot. They tasted almost like an oatmeal cookie (to me). Thanks for the recipe.

If you look back to my variation where I used coconut mine didnt spread and you tripled the amount of coconut so the fact that you had to press them doesnt suprise me. And as far as the protein powder, wheat and whey are interchangable......I just prefer the taste of wheat over whey.

Thanks for your response. I made them again, they are a great 3pm snack with coffee in the office, and this time they spread. I am not a baker and get confused with all the the different "flours" and how to use them. Your recepes are great and thanks again.

Polyd is pretty cool stuff. Those remind me of lace cookies.

I'll have to try using something other than wheat or whey.
