Cool Spinach Dip

I came up with this recipe the last time I went lo carb. Now at every family get together I have to make it.

2 (13.5 oz) cans chopped spinach
1 (14 oz) can diced tomatoes drained
4 green onions skiced thin
4 oz sour cream
4 oz mayonnaise
4 drops of El Yucateco green hot sauce
1 1/2 cups shredded Chedder cheese separated

In a medium microwavable bowl, cook spinach on high for 2 minutes. Drain. Add tomatoes, onions, sour cream, mayonnaise, hot sauce, and 1 cup of cheese. Mix well. Top with remaining Cheddar cheese. Heat in microwave until cheese is melted.

Thanks, this sounds great. I love spinach and will try this tonight. It can also serve as my 'veggie'. I don't care for tomatoes, so I probably will use just a few of them. Have you ever tried it with red hot sauce? Or will this make a huge difference?

I used to use Tabasco sauce for it, I just found that I like the green better. But it doesn't matter.

sounds good - And for the bread, use the microwavable flaxseed bread.

Hi,

I saw your posting and wanted to know what microwavable Flaxseed bread is and where you find it? Is it suituable for induction Phase One?

Can you tell I'm a bread lover?

Yes, it is induction friendly. Very high fibre, very few net carbs.

Wow, I made that Flaxseed bread last night.
Does that ever fill a gap! I'll be making that one again.
