An easy enchalada meal
I made this last night for the family.
I took a pound of burger (I happened to have elk/beef mix) and browned it in a pan.
After the meat was browned I drained off what I could and then added red enchalada sauce. I cooked until thickened and at this point took out a small bowl for myself.
For the rest of the family I added some water and then shredded tortillas into the pan. This could work with low carb tortillas as well as shredded cabbage. Cooked it until thickened nicely, stiring often as it would stick to the pan if I forgot it.
The end result was a enchalada tortilla soup thing. The funny part was my overly picky 5 year old loved it while my eat anything 2 yearold wouldn't go for it.
