Default Annie's chocolate-almond-coconut candy

I posted this in my journal and thought I'd post it here too.

I'd love to hear of your variations and ideas to keep me from making this candy a rut.

Would also like to know the per-piece carb count. I came up with approx. 4.5 g. carbs for the entire recipe of six candies.

Annie-Pie's Chocolate-Almond-Coconut Candy Drops
Makes 6 candies

3 T. coconut cream
2 T. Splenda
1 T. softened butter
1 T. half & half
2 T. unsweetened coconut flakes*
8 almonds (1 T.), chopped

Blend together. Drop by teaspoon on to plastic wrap or waxed paper. Freeze.
* I bought these at Trader Joes. They are flattened, brown coconut strips.

These melt fast.
Frozen: candy
Defrosted: decadent chocolate mousse!

Can't wait to finish induction and make these . Hmm not sure if I can find coconut cream though. But I'll definitley find coconut milk, will that do?

www.wildernessfamilynaturals.com sells a coconut cream. It is extreamly thick, almost the texture of silken tofu. Much more so then coconut milk.

There is also recipes online you can find for making your own coconut cream and milk. It's a bit labour intensive though as you must roast and grate the coconut.

Rose, I can't believe I did that! Here is the improved recipe. Everything goes better with chocolate, LOL!

BTW I bought a can of coconut cream at my local grocery in the Asian foods aisle. It was $1.79, "A Taste of Thai" gold label.

Annie's chocolate coconut-almond candies

2 T. unsweetened coconut flakes*
