Default Soy Muffins!

I found this on another site and tried it this morning. YUMMMMMMMM. I know most people hate the taste of soy flour but this was REALLY good! I might use less egg next time though because the final product has a distinct eggy taste.

The receipe calls for 3 extra large eggs. I only had medium eggs so I used 4 of those. I might try it with 3 or 2 med eggs next time.

Here is the cut and paste of the reciepe:

3/4 C. SOY FLOUR
1/2 C. + 1T. WATER
1 T. BAKING POWDER
1/4 TSP. CINNAMON
DASH SALT
1 1/2 TSP. BUTTER
3 EX. LARGE EGGS
1 1/2 TSP. VANILLA
1/4 C. HEAVY CREAM
SWEETENER TO = 6 T. SUGAR (I USE ABOUT 5 SWEET N LOW AND 3 EQUAL - I LIKE IT SWEET)

PREHEAT OVEN TO 400°F. COMBINE SOY, BAKING POWDER, AND SALT; SET ASIDE. BEAT EGGS THOROUGHLY, THEN ADD CREAM, WATER, CINNAMON, EXTRACTS, AND SWEETENER. SOMETIMES I JUST USE WHATEVER SPICES I HAVE - CINNAMON, CARDAMOM, ALLSPICE. SIFT IN SOY MIXTURE AND BEAT TILL SMOOTH. TEXTURE IS VERY THIN, ALMOST LIKE THIN SOUR CREAM, SO DON'T PANIC! GREASE 12 MUFFIN CUPS OR USE PAPERS. DIVIDE BATTER INTO TINS, AND TOP WITH EXTRA SWEETENER AND CINNAMON IF DESIRED (I DO!). BAKE 17-20 MIN. OR UNTIL DONE. STORE IN PLASTIC BAG WHEN COOLED, IN THE FRIDGE. GREAT REHEATED IN THE AM IN THE MICROWAVE WITH A THICK PAT OF BUTTER OR CREAM CHEESE. MAKES 12 ~ 2.6 G CARB EACH

These sound great...I am looking for a winter treat like this to have with hot cocoa. I think I will try these tomorrow...or even tonight if I can manage it quickly

BTW how tall are you? I am looking for a buddy with similar stats, our weightrs and goals are close...I am short at about 5'3"..how about you?

I use George Stella's recipe for soy muffins and I love them!! So far I've made his Blueberry Muffins and his Chocolate Chip muffins. Here's the link for the Blueberry Muffins.......

Okay these officially gget my two thumbs up!! I tired them last night and theya rea wonderful...I followed the recipe exactly and spread butter on them before eating...they are great cold too!!

I just made these today, yummy .

I used 3 large eggs, but I think next time I will try using only 2. I also added 1/2 tsp almond extract. I used 9 packets of Splenda, and they are pretty sweet. I like sweet things.
