Default Coconut Cream Pie

I'm not sure where I found this recipe. My apologies if it was here and I'm reposting:

Coconut Cream Pie

4 eggs
1/4 cup butter, melted
1/4 tsp salt
2 tbsp coconut flavoring (I used 3 tbsp DaVinci Coconut SF Syrup)
2 cups heavy cream
2 tsp vanilla extract
1/2 tsp baking powder
1 cup unsweetened coconut
1/2 cup Splenda

Preheat oven to 350.
Butter a 9 inch pie pan
Place all ingredients in a bowl and whisk until smooth.
Pour into pie pan and bake approx. an hour until top is golden brown and set.
Cool.
Store in refrigerator overnight to set.
Top with whipped cream prior to serving.

I don't have the calorie/carb breakdown. I'm sure FitDay could accommodate.

It looks really good. What carbcount does the coconut add? Anyone know? How big is a serving?

Coconut is mostly fiber, so while it should be waited for OWL with the other nuts, it isn't a high carb item.

I still love the coconut from www.wildernessfamilynaturals.com

angel47 - This is not an induction food as it has a large amount of cream and coconut. After induction you can make it as is, or experiment with different nut crusts. Some coconut and almond flour could make a nice crust for this

adding up all the nutrition info from the various ingredients, you get this for a carb/calorie breakdown:

Whole Recipe: 3026 Calories; 300g Fat (87.7% calories from fat); 39g Protein; 56g Carbohydrate; 15g Dietary Fiber.

1/8th Piece: 378 Calories; 37g Fat (87.7% calories from fat); 5g Protein; 7g Carbohydrate; 2g Dietary Fiber. NET 5G.

Hmmmm, seems to me that 1 SERVING could squeak into Induction, but not the whole pie, for sure.

I love coconut and this sounds extra yummy! Has anybody tried this yet? I was wondering if it had that great, gooey, texture of regular coconut cream pie!

if you're in induction just don't use a crust if you're out of it i'd say use an almond/nut crust

Tried this last night. I had bought a large thing of cream for it, but that was a few days ago. Apperently my cream love snuck through because I only had 1 cup. I made it up with 1 tin of the nestle con creme. So a tad altered.

Anyway the end result was almost a coconut cake. I was picturing more of a mirangue looking thing for some reason. Taste was decent enough though
