Default zuchini puffs

i dont know where this recipe is, i could swear i saw it somewhere here but cant find it. anyway it really deserves to be re-posted b/c it is soooo good.

slice a zucchini into little rounds and place on a cookie sheet.
mix equal amounts MAYO and GRATED PARMESAN, and stir in some chopped fresh BASIL.
spoon mix onto each zucchini round and broil for a few minutes. they are very fast so be careful.

thank you to the original poster b/c this is my favorite side dish now and induction friendly.

Oh, my gosh! I'm going to make this right now! I have some browned sausage i'm going to mix in with the mayo/cheese to increase the protein. that way, i can have for lunch.

I do something similar just without the mayo. I ran across it somewhere in the forum here. It's one of my FAVORITES! I will give the mayo recipe a try too. Here's what I do as a variation to your recipe.

Slice zuchinni in rounds, put a very small pat of butter on each round, lightly salt, pepper and cover with parmesean. Cook on 375 degrees until parmesean turns light brown - usually about 20 to 25 minutes. Then I turn it to Broil for just like 2 minutes to crisp the top. This is DIVINE!!!!! Eat and Enjoy!! YUMMMMMMMMMY!!!

I used to make an appetizer with finely chopped ham, grated pepperjack cheese & mayo all mixed together. I would then put it on sliced french baguette & bake. I'm gonna try it on zucchini! Whoo Hoo!

I think the recipe you are referring to is the Oven Fried Parmesan Zucchini. I LOVE it.

I just made these, they were delicious. Rather, I made a variation. I have a bacon & onion salad dressing that I don't like on lettuce so I use it for other things. I mixed it with the parmesan and spread on the zucchini rounds & broiled. It was wonderful. I get tired of salads and plain vegetables, it's nice change.
