Default Crispy Parmesan Chicken Goujons

Tried this out for lunch and turned out much better than I expected.

You need for one (Multiply for bigger portions)

1 chicken breast sliced into thin strips
1 egg white whisked until fluffy
grated parmesan
pepper
dried herbs (I used oregano)

Dip chicken slices in egg white
Mix the parmesan with the pepper and herbs
Dip th eggy chicken into the parmesan mixture pressing in until well coated

Put the chicken onto a greased or non-stick baking tray and bake at 200 (my hottest oven setting) for 20 mins until well browned and crisp.

They may take some prising off the tray but they are well worth it - really crispy and tasty. Next time I'm going to add some sesame seeds.

Serve with mayonnaise to dip into

Wow this sounds good. Going to try it some time this week. Did you use fresh parmasian or the stuff that comes in a can that you sprinkle on pasta.

I used freshly grated parmesan. I don't like the stuff in a can although it might work well here

The dry stuff in a can works better than fresh for this, in my humble opinion. Though I use fresh for other things.

I guess it coats the chicken better. I might try it and see although I find it smells like cat sick! Don't ask!

When using parmesan coating for chicken etc in the oven, I find that the re-usable non-stick baking sheet is ideal - everything just slides off perfectly. It's sometimes called magic carpet - looks like thick black plastic. I also use it to line the grill pan and cake tins - good for making tortillas and cheese crisps in the microwave, too.

Any idea what the total carbs/serving ends up being in this recipe?
