Pan Clams
1 dozen little neck clams, cleaned and scrubbed. Any open clams, please toss.
1/2 stick of sweet cream butter
1/4 cup of olive oil
4 cloves of fresh garlic, pressed
1/2 cup of extra dry sherry
1/2 cup of chopped fresh basil.
Make sure clams are clean and not open. set aside.
Heat up a small/medium sized frying pan with high edges, or a small wok on top of the stove.
Melt butter with olive oil in pan. Press garlic into butter, olive oil mixture. Let cook on medium heat to get the garlic to fuse with olive oil, butter mixture... enjoy the aroma.
When the aroma is too much to bare, add clams and simmer for 5 minutes.
Add sherry.
By now, clams should be open, and have made an incredible broth.
Pour clams and broth into a bowl, add fresh basil and serve. Any low carb bread will work to suck up all this incredible broth.
Serves 1.
