Default Joesfolks Chicken Bundles

This recipe looks alot more complicated than it is. Give it a try. My family loved it.


Joesfolks Chicken Bundles

1 c. chopped celery 1/2 c. chopped onion
1/2 c. chopped carrots 2 T. melted butter
1/4 t. dried thyme 1/2 t. onion powder divided
1/2 t. onion powder salt and pepper to taste
1/4 t. garlic powder
1 egg 1 T. milk
1 c. wheat bran Ranch Dressing low fat
3 toothpicks
3 boneless skinless chicken breasts- pounded flat
3 slices low fat mozzerella cheese

Season chicken filets with salt and pepper and half of the onion powder. Lay one cheese slice on each filet.

Saute celery, onion, carrots, and thyme in 1 T. melted butter until just tender. Add salt and pepper to taste.

Spoon veggies onto chicken filets. Roll filets burrito fashion and secure with toothpicks.

Combine egg and milk well. Dip chicken bundles into egg mixture.

Combine wheat bran with salt, pepper, garlic powder, and remaining onion powder. Roll bundles in wheat bran mixture.

Place filets in greased pan and dot with remaining melted butter.

Bake in pre-heated 350 degree oven for 30-35 minutes.

Remove from oven and top with ranch dressing.
Serves 3 very hungry people.

Joe, you know i am gonna have to gather these ingredients and give myself a Saturday to try to do this recipe justice. THANKS!!

Thanks for the recipe Joesfolks! It looks really good but I am on induction so I would have to leave out the carrots...I think it work!
