Default Egg Pizza Anyone?

Well after a year on this WOE I needed to get creative with eggs so here is a super yummy recipe for a change of pace.

Melt 1 tsp. of butter in an oven proof fry pan, add 2 eggs lightly beaten with your spices of choice (salt, pepper, dill whatever).

Shake the frypan lightly to move the egg around to cover the bottom of the fry pan. When the top is almost dry, add 1 TBSP. salsa to cover the egg and begin adding toppings ie. pepperoni, mush, gr. peppers and cheese (any kind of combo you like). Stick the fry pan under the broiler in your oven for 3-5 mins. until cheese is bubbly (or lt. brown..I like mine crispy).

Slide onto a plate and cut in pizza wedges. Yummmy Enjoy!!

Sounds yummy -

Often at work I get the breakfast burrito in the cafeteria without the burrito ofcourse - with sausage, cheese, green peppers, onions and salsa(very tiny amount) - it's delicious - sounds like this could be similar only done in the oven and crispy like a mexican pizza!!! Thanks for sharing

I make pizza omelettes and chicken quesadilla omelettes all the time. Dip the quesadilla ones in real sour cream and yum, yum, yum. I used to eat chicken quesadillas all the time because they were quick and easy to make, but the omelette style is way better, much more filling, and I can't eat as much as I used to with the wraps(two "healthy" wraps each time I made them OMG was that a lot of carbs, no wonder I could eat so much and still be hungry after).

It is so good, and really versatile. I like it flat though and super crispy, it seems more like "crust". You could probably roll them up too. Just watch you don't burn yourself
