Default Chicken Fiesta Soup

This was really good. Not really sure of the carb count. The ingredient with the highest concentration of carbs is the Velveeta. 8 oz. of velveeta has about 24 carbs. The small can of black olives has about 6-8 carbs. Makes about 8 1 cup servings.


Chicken Fiesta Soup


1 cup of heavy cream
1 cup of sour cream
1/2 cup of water
2-3 cups of shredded chicken breast meat
1 can of rotel ( don't drain )
1/2 cup of chopped scallions
1 small can of sliced black olives (drained)
1 teaspoon of cumin
1/2 teaspoon of black pepper
8 oz. of velveeta cheese
1 cup of shredded cheese (kraft/mexican)
1 cup of monterey jack cheese

(other seasonings optional.. I used Tony's Cajun seasoning. Not too much is needed due to the scallions and rotel which gives it a kick)

To prevent soup from cooking too fast or burning cook on low heat and stir continously. In double boiler, mix heavy cream, sour cream, rotel, black olives and water together. Add in all cheeses, chicken and seasonings and continue to stir until all cheese is completely melted.

Can serve soup with a dab of sour cream on top and shredded cheese

I have been looking for a good cheese soup recipe..........

Rotel can be found on the grocery aisle where the can tomatoes are. It is a combination of diced tomatoes and green chilies.. it's kind of spicy.. but not too hot.. gives cheese a nice mild spicy flavor. I live in Texas.. so it's in very store.. not sure if it is offered up north.
