cara's fried "taters" and green beans
My best friend (she's hiding on this site somewhere) used to make this dish with potatoes and it was my favorite. After we both chose the low carb lifestyle I experimented with it because it was one of the things I missed most from my diet. I usually don't care for turnips, but I realized that when fried, they carmelize and therefore sweeten. It removes the kind of bitter flavor I always associated with turnips.
--Peel and chop the same number of turnips as you would if you were making fried potatoes (I use about four or five and it lasts just me for about three meals)
--Chop one small onion
--In a large skillet or electric skillet, cook about 8 slices of bacon until crisp.
--remove bacon and set aside.
--brown turnips in drippings until soft and golden brown at about med-med high
--add onions and one can of drained cut green beans, cover and turn skillet to simmer for about 15 minutes
--remove lid and stir.
--crumble cooked bacon on top and serve. salt and pepper to taste.
