The South Beach Diet™ is designed so that you can easily swap meals and ingredients. If you don't like eggs for breakfast, have low-fat cottage cheese or lean meat instead. Not a fish lover? Then choose lean beef or poultry. In Phase 1 of the diet, you can eat as many proteins and vegetables as you like, plus fats like olive oil. Fruit and starches aren't allowed until Phase 2. How to adapt your meal plan - Phase 2

In Phase 2, you'll gradually begin to reintroduce healthy starches and carbohydrates into your diet, starting with low-glycemic index ones like oatmeal and couscous, and eventually moving on to high-glycemic ones like fruits and whole-grain bread. The goal is to eat healthy carbs while continuing to lose weight, so pay attention to how they affect you. If your weight loss stalls or cravings return, cut back or try some different carbs and monitor the results. Here's a look at general eating guidelines. Want specific food choices? You can now eat anything from the Phase 1 Foods to Enjoy list as well as items from the Phase 2 Foods to Reintroduce list.

How to adapt your meal plan - Phase 3

By the time you reach Phase 3, you'll know which starches and carbs you can eat without gaining weight, so you'll have already integrated them into your diet. You'll be eating normal foods in normal-size portions, sticking to the good carbs and good fats. There's no list of forbidden foods in Phase 3, however. In other words, if you want it, and it doesn't undo all your sacrifices, you should go ahead and enjoy it! Here's a look at general eating guidelines.

If you'd like to adapt some of your meals to exclude meat, simply choose protein sources such as beans, soy products, lower fat cheese, eggs and egg substitutes, and eat vegetables and nuts for snacks. You can also choose to receive vegetarian-only meal plans, complete with shopping lists, by selecting "vegetarian" in the Profile area.

(Published 2/13/05) Finding it difficult to avoid chocolate on Valentine's Day? There's no need to avoid it completely — a little dark chocolate is OK starting in Phase 2. The following are general guidelines for year-round chocolate consumption.

Darker is better. Plain chocolate bars are often labeled with a percentage of cacao (50 percent, 70 percent, etc.). The higher the percentage, the more antioxidants it contains.
Limit milk chocolate consumption. This variety tends to contain a lot of sugar.
Less is more. Don't overdo it when eating chocolate. While it may contain beneficial compounds, it can still be a diet buster. One good way to limit intake is to melt a small amount of chocolate and use it as a fruit dip (Phase 2). The fruit will help fill you up faster. Check the Foods to Enjoy and Avoid list for recommended fruits.
Treat chocolate as a treat. Eating it only on special occasions like Valentine's Day will help ensure that you don't compromise weight-loss efforts.

Thank you Judy for all the info! I've also added your website to my Favorite list. After struggling with Atkins, I'm switching to SB on Sunday. (Today's my birthday, no use kidding myself)

I notice on SB you can drink milk which was a real struggle for me when I was on Atkins, as I need milk for calcium and I'm not a big fan of yogurt!
Just wanted to pop in and say thank you! I have hope again!

thanks for the great tips. I printed them out. After reading the book (and other LC books) I still had some questions and was a bit confused, especially about the dairy products allowed in Phase 1. The updated list really helped.

I just brought this over from the official South Beach web site....it does show us how to get into phase II the correct way!! Please read this!!

In Phase 2, you'll gradually begin to reintroduce healthy carbohydrates into your diet. Here's how to do it: Week one and two: Add in two good carb choices daily. We suggest you reintroduce fruit at lunch, dinner, or as a snack, but it's not the best choice first thing in the morning at breakfast. We recommend a high-fiber cereal for breakfast. That is really helpful!
One day last week on Phase II we tried a Fruit smoothie for breakfast and it made us hungry all day!! So I can vouch for no fruit in the morning.
Althoug we did the 1/2 a grapefruit w/1 piece wholegrain cheese bread and that was very filling and tasty.

Did you notice that they give us beans with lunch and dinner??

Thats gonna make the bean lovers very happy!!
